The Recipe Box: Football cake

With high school football season winding down, why not throw a tailgate party for your favorite gridiron gang? You can finish the celebration with this football cake. It’s sure to score a touchdown with all your guests.

You will need the following:

1 box cake mix (your choice of flavor) and the ingredients - eggs, water, oil - to go with it
1 tube white frosting
1 can frosting
1 7 oz. bag coconut
Food coloring (green for coconut and your team’s colors for icing)
6-8 pretzel sticks
Football figurines (optional)

1. Bake the cake following the directions on the package. Bake in a rectangular pan to get the shape of the field.

2. Ice the cake with the can of frosting.

3. Tint the coconut by combining it in a Ziploc bag with some green food coloring. Shake the bag until all the coconut is covered by the food coloring.

4. Sprinkle the coconut on the cake so that the top is completely covered.

5. Use the tube of white frosting to mark lines and numbers on the field. Leave room at the cake’s “end zones” to put your team’s name and colors. If you’re feeling really creative, you can draw your team’s mascot at the 50-yard line.

6. Cover pretzels in white icing to use as goalposts. After icing, assemble in the form of goalposts and lay flat to let the icing harden. Then, stick one in each end of the cake.

7. To give your field a special touch, add football figurines and/or a football. You can use a candy football or melt a piece of chocolate and give it white icing laces.
